Kale, Walnut, Gouda Salad

This is a fan favorite salad. My entire family loves it! This recipe is inspired from a dish I ate in a restaurant in New York City, but with my own twist.

 

Ingredients:

  • 1 bunch tuscan kale stemmed, cleaned, and chopped
  • sea salt
  • lemon
  • extra virgin olive oil
  • grated carrot, about 1 cup 
  • 1/2 honey crisp apple, julienned 
  • handful of toasted walnuts 
  • shredded gouda cheese
  • pomegranate seeds, for garnish

 

Procedure: 

1. Remove kale stems, wash, and chop into smaller pieces. Add chopped kale to a mixing bowl along with salt, lemon juice, and drizzle of oil. Start with a half lemon and add more if necessary. Same goes with salt and olive oil. Taste as you go. 

2. Start massaging the kale in the bowl. This helps to break down the kale’s fibrous texture, release its moisture, and makes it more digestible and enjoyable to eat! Do this for about 2-3 min until it has shrunk in size.
3. Add carrot, apple, and walnuts. Toss together. Add more salt, lemon, or olive oil if needed here. Taste and adjust to your desired taste!
4. Pour onto a serving plate or bowl.
5. Top with shredded gouda and pomegranate seeds.
6. Enjoy! 😜

 

Notes: You can massage the kale, a day or night you plan to serve this salad. The kale does not lose its structure.
